AUNT POLLY'S SWEET POTATO CASSEROLE

2 lb Sweet potatoes, boiled,
-peeled, and mashed
2 Eggs, beaten
2 oz Margarine, melted
1/2 c Brown sugar
1 c Buttermilk
1/4 ts Baking soda
1/2 ts Nutmeg and cinnamon
Combine all ingredients and mix well. Will be very
soupy. Bake at 350F for 1 hour. Yields about 10
servings.
Chicken And Dumplings Casserole

Vegetable cooking spray
1/2 cup milk
2 tablespoons vegetable oil
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
6 boneless skinless chicken breast halves -- uncooked
1 medium onion -- finely chopped
2 stalks celery -- coarsely chopped
1 10 oz. pkg. frozen sliced carrots
1/2 teaspoon dried sage -- crushed
1/4 teaspoon ground pepper
2 cans {13 3/4 oz. each} chicken broth
* Preheat oven to 325 degrees.
* Coat a 2 1/2-quart casserole with cooking spray.
* In a medium bowl, combine milk and oil. Gradually stir in flour, baking
powder, and salt. Mix well into a dough consistency and set aside.
* Place chicken breasts in bottom of casserole. Cover chicken with onion,
celery, and carrots. Evenly sprinkle sage and pepper over vegetables; pour
broth over dish.
* Using the dough mixture, form 2-inch balls and drop into casserole.
* Cover tightly and bake for 1 1/2 hours.

1 lb Hamburger
3/4 c Celery; chopped
3/4 c Onion; chopped
1 1/4 c Boiling water
1/2 c Uncooked rice
1/2 t Salt
1 Can chicken and rice soup
4 oz Mushrooms
1 T Brown sugar
2 t Soy sauce
1 t Butter or margarine
1 1/2 c Chow mein noodles
Cook and stir hamburger, celery and onion until hamburger is light brown,
then drain. Pour water on rice and add salt in greased 2quart casserole.
Stir in hamburger, soup, mushrooms, sugar, soy sauce and margarine. Cover
and cook in 350' oven for 30 minutes; stir. Cook uncovered for 30 minutes
longer. Stir in noodles, serve immediately.
Note: Water chestnuts or bamboo shoots may be added if desired.
Macaroni Supper Casserole

2 Cups Elbow macaroni(8oz)
Salt
3 Quarts Water -- boiling
2 Tablespoons Corn oil
3 Cups Onion -- pearl whole
1 Garlic clove,large -- crushed
1 Can Tomatoes -- undrained(16oz)
2 Teaspoons Sugar
1 Can Tomato paste(6oz)
2 Eggs
1 Can Cottage cheese(16oz)
2 Packages Spinach -- chopped(10oz)
3 Cups Cheddar cheese -- grated(3/4#)
1 Teaspoon Sage -- ground
1. Gradualyy add macaroni and 1 tablespoon salt to rapidly boiling water so
water continues to boil.~ 2. Cook, uncovered, stirring occasionally, until
tender; drain in colander.~ 3. Heat oil in large saucepan.~ 4. Add onions
and garlic; saute over medium heat, stirring constantly, until onions are
almost tender, about 3 minutes.~ 5. Stir in undrained tomatoes; break up
tomatoes with spoon.~ 6. Stir in sugar, tomato paste and 1/2 teaspoon
salt.~ 7. Beat eggs in a bowl until light; stir in cottage cheese, spinach,
1/2 cup Cheddar cheese, sage and 1/2 teaspoon salt. Mix well.~ 8. In an
ungreased 13x9-inch baking dish, arrange in layers; a third of the tomato
sauce, half the macaroni, a third of the Cheddar cheese and half the
spinach mixture.~ 9. Repeat layering; spread the remaining sauce on the
spinach layer and spinkle the remaining cheese around the edges of the
casserole.~ 10. Cover with foil and bake in preheated 400'F. oven 25
minutes.~ 11. Uncover and bake 5 minutes longer, or until mixture is hot
and bubbly and cheese is melted.
RICE CASSEROLE

1. Cook rice. 2. Put rice on the bottom of a 9x12" baking dish 3. Top with
chopped onion and grated non-fat cheese 4. Layer on 2 good-sized sliced
tomatoes. You can also use sliced yellow squash or zucchini. 5. Top with
non-fat sour cream or yogurt. 6. Bake at 350 for 30 minutes.
SLOW BOAT TO CHINA CASSEROLE

3 1/2 c Boiling water
1 c Rice
1 md Onion, chopped
1 lb Ground beef, browned
2 c Diced celery
1 1/2 tb Brown sugar
3 tb Soy sauce
1 t Salt
1 cn Cream of mushroom soup
Pour water over rice, let stand for 30 minutes. Do not drain. Add
remaining ingredients to mixture. Beef and onion may be browned
together. Add celery to the lightly browned mixture to steam briefly
before adding to the rice. Bake covered at 350 degrees for 1 hour.
Uncover, bake for 30 minutes longer.
6-8 servings.

2 pk Frozen chopped spinach; thaw
2 c Noodles/mediuim; cook
1/2 c Onion; chop
1 c Cheddar or swiss cheese;
-grate
1/4 c Margarine
1/8 ts Nutmeg
1 cn Cream mushroom soup
Combine all ingredients in crockpot. Cook on HIGH 1
hour, switch to LOW 4 to 5 hours.

2 c Crushed Corn Chips 1 ea Large Egg Beaten
2 T Water 1 ea Env. Onion Soup Mix
1 lb Lean Ground Beef 4 oz (1 Cn) Chopped Green
Chilis*
3 oz (1 C) Monterey Jack Cheese** 8 oz (1 cn) Tomato Sauce
1 ea Med. Green Pepper, Chopped
* Green chilies should be drained.
** Cheese should be any mild cheese and should be shredded. Should = 1 C.

Preheat the oven to 350 degrees F.
Combine corn chips, egg, and water; press into 9-inch pie plate or
casserole. Bake 10 minutes.
Meanwhile, in large bowl, combine onion recipe soup mix, ground beef,
chilies, and 1/2 C cheese; evenly press into prepared crust. Top with
tomato sauce, then green pepper and bake 30 minutes. Top with remaining
cheese, then bake an additional 5 minutes or until cheese is melted and
beef is done.

2 tb Onion, chopped
2 tb Fresh chives, finely chopped
1 ts Shallot, finely chopped
3 tb Green bell pepper, finely ch
1/4 c Olive oil
2 c Wild rice, rinsed well and d
4 1/2 c Chicken broth, heated
1 x Salt, pepper to taste
3/4 c Blanched almonds, slivered
In a large saucepan, cook the onionn, chives, shallot, and pepper in
the oil over mod-low heat, stirring occasionally, until veggies are
softened. Add the rice, and cook the mixture, stirring constantly,
for 1 minute. Stir in broth, season with salt and pepper to taste,
and add the almonds.
Transfer the mixture to a 4-qt. casserole and bake, covered, in the
middle of a 325f oven for 75 minutes, or until rice is tender. Stir
once after about 35-40 minutes.
Wild Rice Casserole

3 stalks celery -- thinly sliced
2 medium onions -- finely chopped
1 can condensed cream of mushroom soup (10 3/4 )
2 1/2 cups water
2 packages wild rice and long grain converted rice -- (7 oz each)
1 can sliced mushrooms -- (4 oz) drained
1/2 pound processed American cheese -- cubed
Combine all ingredients in crock pot; stir throughly. Cover and cook on
low setting for 6 to 10 hours (on high setting for 2 to 3 1/2 hours)
