BALONEY CHEESE DOGS

2 hot dog buns
mayonnaise or mustard
2 slices turkey bologna
2 sticks cheddar cheese or string cheese sticks

Spread inside of hot dog buns with mayonnaise or mustard. Roll 1 bologna
slice around each cheese stick. Place inside hot dog bun. Wrap each bun
in plastic wrap.

 

Baked Pizza Sandwich

1 lb Lean Ground Beef 15 oz Tomato Sauce; 1 Cn, OR
15 oz Pizza Sauce; 1 Cn 1 ts Oregano Leaves
2 c Biscuit Baking Mix 1 ea Egg; Lg
2/3 c Milk 8 oz Cheese; *
2 oz Mushrooms;Sliced,Drained,1Cn 1/4 c Parmesan Cheese; Grated

* Use 1 8-oz package of sliced process American Or mozzarella cheese.

Heat the oven to 400 degrees F. Cook and stir the meat in a large skillet
until brown. Drain off the excess fat. Stir in half of the tomato sauce
and the oregano leaves into the meat mixture. Heat to boiling then reduce
the heat and simmer, uncovered, for 10 minutes. While the meat mixture is
simmering, mix the baking mix, egg and the milk. Measure out 3/4 cup of
the batter and set aside. Spread the remaining batter in a greased baking
pan 9 X 9 X 2-inches. Pour into the remaining tomato sauce over the
batter, spreading evenly. Layer 4 slices of the cheese, the meat mixture,
the mushrooms and the remaining cheese on top of the batter and tomato
sauce. Spoon the reserved batter on the top of the cheese. Sprinkle the
batter top with the grated Parmesan cheese and bake, uncovered, until it is
golden brown, 20 to 25 minutes. Cool for 5 minutes before cutting into
squares and serving.

 

 

BARBECUED CHICKEN ON A BUN

1 t Seasoned salt
1/8 t Coarsely ground black pepper
2 Whole boneless chicken
-breasts, halved
4 Buns, split and toasted
4 sl Swiss cheese (1 oz ea)
4 sl Baked ham, warmed (1 oz ea)
Lettuce leaves
-----PEACH-MINT SALSA-----
1 Fresh California peach,
-chopped (about 2/3 cup)
1/3 c Chopped green onions
1 Tomato, chopped
1 1/2 T Chopped fresh mint
1/4 t Chili powder
-----SAVORY GRILLED PEACHES-----
4 Fresh California peaches

Combine seasoned salt and pepper. Lossen one edge of chicken skin and rub
seasoning mixture underneath skin. Cook chicken skin-side down on covered
grill over medium, indirect heat about 30-25 minutes or until chicken is
tender and no longer pink. Remove and discard skin. Serve chicken on buns
topped with cheese, ham, and salsa. Garnish with lettuce. Serve with Savory
Grilled Peaches. Makes 4 hearty sandwiches.

CONVENTIONAL OVEN METHOD: Prepare as above. Roast skin-side up in 350'F.
oven for about 30 minutes or until chicken is tender and no longer pink.
Continue as directed.

TIP: Sandwiches are delicious served either hot or cold.

PEACH-MINT SALSA: In small bowl, combine all ingredients. Refrigerate
leftovers. Makes about 1 1/2 cups.

SAVORY GRILLED PEACHES: Cut 4 fresh California peaches in half. Cook on
covered grill over medium, indirect heat 4 minutes. Turn and cook an
additional 4 minutes or until heated through. Makes 4 servings.

 

 

Broiled Cheddar and Egg Salad Buns
Categories: Cheese/eggs, Vegetables
Yield: 8 servings

8 ea Eggs; Lg,HardCooked, Chopped 3 tb Mustard; Prepared
2 c Cheddar; Sharp, Shredded 1 1/2 ts Salt
1 c Green Bell Pepper; Chopped 1/4 ts Pepper
3 tb Onion; Grated 3 ea Sandwich Buns Or Rolls; *
2/3 c Milk; Evaporated

* The buns or rolls should be split, toasted and buttered.

Combine the eggs, cheddar, green pepper, onion, evaporated milk, mustard,
salt and pepper. Spread each bun with about 1/4 cup of the egg mixture.
Broil about 5 inches from the heat source until hot and cheese is melted,
about 5 minutes. Serve hot.

 

Cheddar Stuffed Franks In Buns

12 ea Frankfurters; Deli Style
1/2 c Sweet Pickle Relish
1 tb Mustard; Prepared
3/4 lb Cheddar; Medium Sharp
12 ea Bacon; Slices
12 ea Buns; Buttered & Toasted

Slit the frankfurters almost through lengthwise. Mix the pickle relish
and prepared mustard together. Cut the cheddar cheese into 12 4 1/2 by
1/2-inch strips. Put one strip of cheddar cheese and about 2 tsps of the
relish mixture into each frankfurter and set aside. Panbroil the bacon
until partially cooked and still limp and drain. Starting at one end,
securing the bacon with a wooden pick, wrap each frankfurter and secure
the other end with a wooden pick also. Set the oven temperature to broil
and arrange the bacon wrapped frankfurters on the broiler rack with the
tops 3-inches below the heat source and broil until the bacon in cooked,
turning once. Serve hot in the buns.

 

 

GRILLED FISH SANDWICHES

4 fresh or frozen fish fillets, -- (about 4oz.)
1 tablespoon lemon or lime juice
1 teaspoon lemon-pepper seasoning, Jamaican Jerk --
seasoning or
--Cajun seasoning
1/2 cup mayonnaise or salad dressing
4 teaspoons Dijon-style mustard
1 teaspoon to 3 teaspoons honey
4 slices Onion and Olive Focaccia (see recipe) or 4 --
purchased focaccia--
--or hamburger buns or kaiser rolls, -- split and
toasted
watercress or lettuce leaves, -- optional
roasted sweet red pepper strips or fresh --
tomato slices--
--optional

Thaw fish, if frozen. Brush fish fillets with lemon or lime juice. Rub
desired seasoning evenly onto all sides of fish. Place the seasoned fish
fillets in a well-greased wire grill basket. Grill in the wire basket on
an uncovered grill directly over medium coals for 4 to 6 minutes for each
1/2 inch thickness f fish or just till fish begins to flake easily when
tested with a fork. Meanwhile, for spread, in a small mixing bowl stir
together mayonnaise or salad dressing, mustard, and honey to taste. To
serve, spread the dressing mixture onto the cut side of focaccia slices
or buns with watercress or lettuce, fish, additional dressing mixture,
roasted red pepper or fresh tomato, and top slices or halves of bread.
Makes 4 servings.

 

 

Lentil & Bulgur Patty Sandwiches No. 307 Yields 6 Servings

1 1/2 cups lentils 1/2 tsp salt
1 cup onion, chopped 1 tsp paprika (hot or sweet)
2 large garlic cloves, crushed 1/4 tsp black pepper, freshly
4 cups water ground
1 cup bulgur (cracked wheat) 1 cup scallions, finely
1 cups parsley, fresh, minced chopped with tops
1/4 Cup parsley, minced 6 pitas
2 tbls oil

Combine the lentils, onion, garlic and water in a medium saucepan.
Bring to a boil.
Reduce the heat.
Cover.
Cook for 20 to 25 minutes or until very tender.
Add the bulgur, the second measure of parsley, the oil, salt, paprika and
pepper.
Stir to combine.
Cover.
Cook low heat for 2 minutes.
Let cool to lukewarm in the covered pan.
When lukewarm, shape into patties.
Combine the second measure of parsley and the scallions on a dish.
Press both sides of the patties into it.
Serve the patties in the pitas (cooled or chilled).

CALIFORNIA RANCH FOREMAN SANDWICH:
Here's a welcome change for school lunch -- or for that inevitable
mid-afternoon snack. Snip California dried figs into small pieces, right
onto bread richly spread with peanut butter and broken nut meats.
Sprinkle lightly with brown sugar.

TOASTED FIG & CHEESE SANDWICH:
Snip California dried figs onto bread slices. Lay a slice of mild American
cheese on top of the figs. Top with a fig split in half and dotted
generously with butter or margarine. Broil until cheese begins to melt.
Extra good served with apple and walnut salad, a sweet pickle or two, a
hot soup and favorite beverage. Makes an ideal lunch-at-home for busy
homemakers.
